Job Description

The Executive/Senior Executive Food & Beverage Controller is accountable for maintaining financial accuracy, operational compliance, and quality standards across all assigned outlets. This position is instrumental in reinforcing internal controls, mitigating operational risks, and enhancing overall business performance through systematic audits, monitoring, and structured reporting.


Key Responsibilities:


Operational Audits & Compliance

  • Conduct daily outlet inspections in accordance with management-approved schedules.
  • Execute structured audits to ensure compliance with company policies, SOPs, and operational standards.


Revenue Control

  • Verify physical cash collections against system-recorded sales.
  • Reconcile daily collections with corresponding bank deposits.
  • Identify discrepancies and escalate deviations in a timely manner.


Inventory Management

  • Cross-check system closing stock with physical inventory counts.
  • Investigate stock variances and document findings.
  • Monitor stock handling, storage practices, and compliance with established procedures.


Quality Assurance

  • Inspect food and beverage items to ensure freshness, proper labeling, and adherence to quality standards.
  • Ensure compliance with food safety and hygiene regulations.


Production Monitoring

  • Review system entries for tea, coffee, and other production items.
  • Validate accurate recording and ensure alignment between system data and actual output.


Recipe & Cost Control

  • Verify served items against the approved Bill of Materials (BOM) in the system.
  • Ensure strict adherence to standardized recipes and portion control guidelines.


Pricing Governance

  • Confirm consistency between system pricing and menu board displays.
  • Report pricing discrepancies for corrective action.


Warehouse Oversight

  • Conduct periodic warehouse audits as directed by management.
  • Ensure stock accuracy, proper documentation, and adherence to storage standards.


Reporting & Communication

  • Prepare detailed audit reports following each outlet visit.
  • Share observations with relevant stakeholders and recommend corrective measures.
  • Provide data-driven insights to support operational improvements and informed decision-making.
