Job Description

The South Indian Commis I is responsible for preparing and cooking authentic South Indian dishes while assisting the senior chefs in maintaining kitchen standards, hygiene, and quality. The role requires good knowledge of South Indian cuisine, ingredients, and cooking techniques, ensuring consistent taste and presentation.

Key Responsibilities

Food Preparation

  • Prepare South Indian dishes such as dosa, idli, vada, sambar, chutneys, uttapam, pongal, and other regional specialties.
  • Assist the Chef de Partie in daily kitchen operations.
  • Ensure mise en place is prepared before service.
  • Follow standard recipes and portion control.

Kitchen Operations

  • Maintain cleanliness and hygiene as per kitchen standards.
  • Ensure proper storage of food items according to food safety regulations.
  • Assist in stock rotation (FIFO) and inventory management.
  • Support in minimizing wastage of ingredients.

Quality & Consistency

  • Ensure consistency in taste, presentation, and portion size.
  • Maintain high standards of food quality and freshness.
  • Follow SOPs and kitchen guidelines.

Team Support

  • Assist senior chefs during busy service hours.
  • Work collaboratively with kitchen and service staff.
  • Follow instructions from the Chef de Partie or Sous Chef.
Skills & Competencies
  • Knowledge of South Indian cuisine and traditional cooking methods.
  • Ability to prepare batter, chutneys, gravies, and breakfast dishes.
  • Understanding of kitchen hygiene and food safety standards.
  • Ability to work in a fast-paced kitchen environment.
  • Good teamwork and communication skills.
