Job Description
PURPOSE
This position is responsible for leading, standardizing, and governing the Food Safety Management System (FSMS) across multiple units, in line with HACCP and ISO 22000 standards. The role ensures compliance with statutory regulations, drives hygiene excellence, and builds robust audit and monitoring frameworks across all culinary operations.
Through strategic oversight, risk management, and cross-functional collaboration, the Sr. Manager Hygiene safeguards the health of members, guests, and employees while strengthening the organizations reputation for world-class food safety and hygiene standards.
KEY ORGANIZATIONAL RELATIONSHIPS
Reports to: Head HSE / VP Operations
Reporting Roles: Hygiene Managers | Hygiene Executives | Hygiene Supervisors
Interacts with:
- External Regulatory Authorities, Certification Bodies, Vendors, Suppliers, Audit Agencies
- Internal Unit Heads, Executive Chefs, F&B Teams, Procurement, Engineering, Quality & HSE Teams
KEY RESPONSIBILITIES
Drive Operational Excellence
- Lead the development and implementation of standardized FSMS frameworks across all units, incorporating HACCP and ISO 22000 standards.
- Drive consistency in hygiene practices through structured audits, inspections, and monitoring protocols across kitchens, storage areas, and service zones.
- Establish governance mechanisms to track compliance, audit scores, and corrective actions across units.
- Oversee risk assessments for vendors, suppliers, and logistics partners to ensure end-to-end food safety compliance.
Applied Learning
- Stay abreast of evolving food safety regulations, global standards, and industry best practices.
- Design and roll out structured training programs on hygiene, food safety, and compliance for culinary and operations teams.
- Drive capability-building initiatives and continuous learning interventions to strengthen hygiene awareness across units.
- Continuously review and enhance SOPs based on audit findings, incident analysis, and regulatory updates.
People Management
- Lead and develop hygiene teams across units, ensuring strong accountability, capability building, and performance management.
- Mentor Hygiene Managers and teams to drive ownership of hygiene standards at the unit level.
- Promote a culture of discipline, accountability, and continuous improvement in hygiene practices.
- Recognize and reinforce adherence to hygiene and food safety standards.
Business & Compliance Acumen
- Ensure compliance with all statutory food safety regulations, HACCP, and ISO 22000 certifications across the cluster.
- Drive audit readiness and liaise with external agencies for inspections, certifications, and compliance reviews.
- Maintain robust documentation, audit trails, and compliance records for traceability and governance.
- Minimize business risk through proactive identification and mitigation of hygiene and food safety gaps.
Leadership
- Lead the hygiene function as a center of excellence, driving standardization and best practices across all units.
- Influence cross-functional stakeholders to embed hygiene and food safety into daily operations.
- Represent the hygiene function in leadership forums, audits, and external reviews.
- Drive initiatives to enhance hygiene ratings, audit scores, and overall compliance benchmarks.
Managing Legal and Compliance Practices
- Ensure accurate maintenance of temperature logs, hygiene checklists, audit reports, and compliance documentation.
- Continuously review and update hygiene SOPs to align with regulatory and organizational requirements.
- Ensure allergen management and food labeling standards are implemented and monitored across units.
Occupational Health & Safety Responsibilities
- Drive the implementation of health, safety, and hygiene standards across all food production and service areas.
- Identify potential risks and ensure timely preventive and corrective actions.
- Ensure teams are trained in safe food handling, hygiene practices, and emergency response protocols.
- Investigate incidents, conduct root cause analysis, and implement preventive measures across units.
JOB REQUIREMENTS / HIRING PROFILE
QUALIFICATIONS
- Degree in Food Science, Microbiology, Environmental Health, or related field
- CLIP/ CIEH Food Safety certification in ISO 22000 (Implementer/ Lead Auditor)
WORK EXPERIENCE
Minimum 10 years proven experience in Food/ Beverage Industry with experience in managing a team
