Job Description

We are seeking an experienced Head Chefspecialising in authentic Benne Dosa to lead kitchen operations and deliver consistently high-quality South Indian cuisine. The ideal candidate must have deep expertise in traditional Benne Dosa preparation, batter fermentation, temperature, control and butter management while maintaining hygiene, efficiency, and team leadership.


Key responsibilities:


  • Prepare authentic Benne Dosa, with consistent taste, texture, crispness, and aroma
  • Manage batter preparation, fermentation and storage processes
  • Control quality and quantity of butter (benne) usage for taste and cost efficiency
  • Supervise and train kitchen staff on standard recipes and SOPs
  • Maintain food safety, hygiene, and FSSAI standard
  • Manage daily Kitchen operations, inventory, and raw material planning
  • Minimise food wastage and control kitchen costs
  • Coordinate with management for menu planning, and new dish development
  • Ensure timely service during peak hours


Requirements:


  • Proven experience as a Benne Dosa chef / South Indian Head chef
  • Strong knowledge of traditional Karnataka-style Dosa techniques
  • Ability to handle high volume orders without compromising quality
  • Leadership and team management skills
  • Knowledge of kitchen hygiene, safety standards, and food costing
  • Flexible to work shifts, weekends, and holidays


Preferred qualifications:


  • 5+ years of experience in South Indian cuisine
  • Experience in QSR or high footfall restaurants
  • Culinary certification is a plus


Salary and benefits:


  • Salary: 30,000 to 35,000 per month (based on experience)
  • Accommodation/food provided
