About the Role:

Eatopia is deeply invested in celebrating regional Indian cuisines especially South Indian traditions in ways that are respectful, elevated, and relevant to modern diners. This role focuses on preserving authenticity while pushing boundaries in presentation, format, and scalability.

Key Responsibilities:

• Lead R&D for South Indian-focused concepts
• Develop modern interpretations of traditional dishes
• Refine gravies, spice blends, batters & fermentation processes
• Standardise recipes for multi-unit scalability
• Collaborate with pastry/bakery teams for fusion innovation
• Source authentic regional ingredients
• Lead tasting panels and refinement cycles

What Were Looking For:

• Strong foundation in South Indian cuisines (Tamil, Kerala, Karnataka, Andhra)
• Expertise in dosa, idli, appam, uttapam, podis, chutneys & sambar variations
• Deep understanding of fermentation and batter science
• Ability to modernise plating while preserving authenticity
• Strong palate and spice calibration
• High operational discipline

Ideal Profile:

• Passionate about regional storytelling
• Experience in reputed Indian kitchens
• Driven to evolve Indian cuisine beyond clichs
• Interested in building something legacy-driven
