Role Overview

We are building a strong in-house bakery ecosystem and are looking for a highly skilled Artisan Bakery & Pastry Lead to drive excellence across sourdough, laminated pastries, and baked staples. This role blends craftsmanship with large-scale execution, requiring deep technical expertise and operational discipline.

Key Responsibilities

• Lead development of sourdough breads and pizza bases with consistent quality
• Perfect and innovate laminated doughs (croissants, danish, specialty pastries)
• Build and scale bagel and bun programs from scratch
• Design and implement standardised production systems for multi-unit operations
• Manage fermentation schedules, natural starters, and mother cultures
• Train and mentor BOH teams across multiple brands
• Ensure quality control, yield optimisation, and minimal wastage
• Collaborate with culinary teams to integrate bakery into broader menus

What Were Looking For

• Strong foundation in bread science and baking techniques
• Hands-on experience with natural fermentation and sourdough starters
• Proven ability to manage high-volume production environments
• High attention to detail and consistency in output
• Understanding of flour types, sourcing, and hydration profiles
• Ability to balance innovation with traditional baking methods

Preferred Background

• Experience working in artisan or specialty bakeries
• Exposure to caf or modern dining formats
• Ability to develop savory bakery items aligned with brand concepts
